Protein carrot cake
Need something sweet, protein rich and actually nutritious? This cake is the perfect bake, freeze and toast alternative on those days you need a bit of sweetness in your day.
Ingredients
Wet ingredients
- 4 medium carrots, grated
- 4 eggs
- 4 tsp olive oil
- 4 tbsp honey
Dry ingredients
- 2 scoops vanilla protein powder
- 100 g oat flour
- 80 g cornstarch
- 1 tbsp baking powder
Instructions
- Preheat oven to 320F (160C) and line a loaf tin with baking paper.
- In a bowl, mix all the dry ingredients. In a separate bowl mix together all the wet ingredients.
- Fold in the wet into the dry and combine well.
- Transfer the batter to the earlier paper-lined tin and bake for 55 minutes, or until a toothpick comes out clean.
