What you need

  • 2 eggs
  • 160 g natural yogurt
  • 2 tsp coconut sugar
  • 2 tbsp orange peel
  • 2 tbsp vanilla extract
  • 120 g spelt flour
  • 1 tsp baking powder
  • 1 tsp coconut oil, melted
  • orange slices, to serve


  • Mix the egg, yogurt, sugar and orange peel. Fold in the flour and baking powder and mix well until smooth. Lastly, add in the melted coconut oil and mix again.   Fry the pancakes on a dry non-stick pan over low-medium heat until golden brown.   Serve with slices of orange and fresh berries. Pro tip - If avoiding dairy, swap natural yogurt for soy or coconut yogurt. - Spice up your pancakes with cinnamon or cardamom for a fiery kick Key features • Vegetarian or can be made vegan • Quick and super easy
