Egg, Bacon & Avocado Bowl

What you need
- 2 bacon medallions/strips
- 2 hard boiled eggs, chopped
- 1/2 large avocado, chopped
- 1 tbsp red onion, finely chopped
- 1 red bell pepper, finely chopped
- sea salt and ground pepper, to taste
- Fry the bacon until crispy in a non-stick pan, let it cool slightly and chop.
- Combine the bacon, eggs, avocado, onion and bell pepper in a bowl.
- Season with salt and pepper to serve.
