Ingredients
  

What you need for the burrito

  • 400 g tofu - firm Pat dry & cubed
  • 1 onion diced
  • 2 tbsp cornstarch
  • 2 tbsp garlic cloves
  • 2 tbsp tomato paste
  • 1 tsp cumin ground
  • 1 tsp coriander ground
  • 1 tsp paprika powder
  • ½ tsp chili powder
  • 120 ml vegetable stock

What you need for the topping

  • 4 corn tortilla wraps
  • 4 tbsp cilantro
  • ½ red onion sliced

Instructions
 

What you need to do

  • Preheat the air fryer to 390°F (200°C).
  • Combine the tofu cubes with cornstarch, two tablespoons of olive oil and ½ teaspoon of salt. Bake in the air fryer for 20 minutes.
  • Sauté garlic and onion in a skillet for 5 minutes until fragrant. Add the tomato paste and dry spices and cook for a further 30 seconds.
  • Add the vegetable stock and deglaze the skillet, reducing the stock until the sauce thickens. Now add the fried tofu and coat each piece in the sauce.
  • Place the tofu on the wraps and top with cilantro and onion.
