What you need for the burrito 400 g tofu - firm Pat dry & cubed 1 onion diced 2 tbsp cornstarch 2 tbsp garlic cloves 2 tbsp tomato paste 1 tsp cumin ground 1 tsp coriander ground 1 tsp paprika powder ½ tsp chili powder 120 ml vegetable stock What you need for the topping 4 corn tortilla wraps 4 tbsp cilantro ½ red onion sliced
What you need to do Preheat the air fryer to 390°F (200°C).
Combine the tofu cubes with cornstarch, two tablespoons of olive oil and ½ teaspoon of salt. Bake in the air fryer for 20 minutes.
Sauté garlic and onion in a skillet for 5 minutes until fragrant. Add the tomato paste and dry spices and cook for a further 30 seconds.
Add the vegetable stock and deglaze the skillet, reducing the stock until the sauce thickens. Now add the fried tofu and coat each piece in the sauce.
Place the tofu on the wraps and top with cilantro and onion.
