Rustic, Village bread from Greece
Baking bread as they do in the villages within Greece
Ingredients
For the bread
- 2 cups Warm water
- 2 tsp yeast
- 4 cups flour organic, white bakers flour
- Salt Pinch
- Olive oil Spray
Instructions
What to do
- Take your water and add the yeast. Gently wisk to mix
- Make a well in the bowl with the flour, add the yeast water, some salt and mix
- This is where you may have to add more flour. Keep doing so and kneed the dough
- Once the dough is not too sticky, allow it to rest for 1-2 hours in a bowl, covered in a warm place if possible
- When that's done, strech and sweep using dam fingers
- Do this a couple of times and then place it in the bread basket. Score the top slightly and sprinkle flour on top
- Cook in an oven for 45 minutes, either exposed or in a french oven. Take the lid off after 35 minutes to brown the top

Note: This bread can be made with any kind of flour, and you may add fennel seeds, dried fruit, cinnamon or make it a sweet bread. I prefer it plain, and use this rustic bread to mop up my olive oil or add avocado on tip. It's so delicious!
