What you need

  • 2 bacon medallions/strips
  • 2 hard boiled eggs, chopped
  • 1/2 large avocado, chopped
  • 1 tbsp red onion, finely chopped
  • 1 red bell pepper, finely chopped
  • sea salt and ground pepper, to taste


  • Fry the bacon until crispy in a non-stick pan, let it cool slightly and chop. 
  • Combine the bacon, eggs, avocado, onion and bell pepper in a bowl. 
  • Season with salt and pepper to serve.
