Air-Fried Tofu Breakfast Burrito
The Air-Fried Tofu Breakfast Burrito is a crisp, protein-packed delight, filled with flavorful tofu, fresh veggies, and creamy avocado, all wrapped in a warm tortilla for a perfect start to your day
Ingredients
What you need for the burrito
- 400 g tofu - firm Pat dry & cubed
- 1 onion diced
- 2 tbsp cornstarch
- 2 tbsp garlic cloves
- 2 tbsp tomato paste
- 1 tsp cumin ground
- 1 tsp coriander ground
- 1 tsp paprika powder
- ½ tsp chili powder
- 120 ml vegetable stock
What you need for the topping
- 4 corn tortilla wraps
- 4 tbsp cilantro
- ½ red onion sliced
Instructions
What you need to do
- Preheat the air fryer to 390°F (200°C).
- Combine the tofu cubes with cornstarch, two tablespoons of olive oil and ½ teaspoon of salt. Bake in the air fryer for 20 minutes.
- Sauté garlic and onion in a skillet for 5 minutes until fragrant. Add the tomato paste and dry spices and cook for a further 30 seconds.
- Add the vegetable stock and deglaze the skillet, reducing the stock until the sauce thickens. Now add the fried tofu and coat each piece in the sauce.
- Place the tofu on the wraps and top with cilantro and onion.
