  • 230 g self-raising flour
  • 100 g sugar
  • 40 g vegan vanilla protein powder
  • 300 ml almond milk
  • 60 ml Coconut oil, melted
  • 150 g pistachios roasted & de-shelled
  • 30 g spinach

What you need to do

  • Preheat the oven to 320°F (160°C). Line a loaf tin with baking paper.
  • Combine the self-raising flour, sugar and protein powder in a large bowl.
  • Place the almond milk, melted coconut oil, pistachios and spinach into a blender and blend until smooth.
  • Pour the wet mixture into the bowl with the dry ingredients and gently fold until fully combined. Transfer the batter to the prepared loaf tin.
  • Place the tray into the oven and bake for about 35 minutes, or until a skewer inserted into the centre comes out clean
  • Remove the tin from the oven, place it on a wire rack, and allow the loaf to cool completely.

Optional Glaze (not included in the nutritional breakdown)

  • Make a lemon glaze by mixing together lemon juice and icing sugar until smooth.
  • Drizzle the lemon glaze over the cooled loaf and decorate it with additional pistachios.
