What you need to buy
- 230 g self-raising flour
- 100 g sugar
- 40 g vegan vanilla protein powder
- 300 ml almond milk
- 60 ml Coconut oil, melted
- 150 g pistachios roasted & de-shelled
- 30 g spinach
What you need to do
Preheat the oven to 320°F (160°C). Line a loaf tin with baking paper.
Combine the self-raising flour, sugar and protein powder in a large bowl.
Place the almond milk, melted coconut oil, pistachios and spinach into a blender and blend until smooth.
Pour the wet mixture into the bowl with the dry ingredients and gently fold until fully combined. Transfer the batter to the prepared loaf tin.
Place the tray into the oven and bake for about 35 minutes, or until a skewer inserted into the centre comes out clean
Remove the tin from the oven, place it on a wire rack, and allow the loaf to cool completely.
