Make no mistake that this recipe is delicious. It’s out of this world!

Since it’s meal prep time, this is the perfect add-on treat (well, it’s a healthy treat) you can eat when snack time finally arrives.

Coconut custard

Feel like something creamy and comforting? Try this vegetarian coconut custard.

What you need

  • 3 eggs
  • 1 tbsp vanilla extract
  • 2 tbsp stevia
  • 1 cup desiccated coconut, unsweetened
  • 400 ml coconut milk, unsweetened
  • 2 tbsp strawberry jam
  1. In a bowl beat together the eggs, vanilla, and stevia until fluffy.

  2. Fold in the coconut and add the milk. Mix well and transfer into 4 small ovenproof ceramics.

  3. Bake for 45 minutes, until the top, is slightly browned. 

  4. In the meantime, prepare the sauce by mixing the jam with 2-4 tbsp. of water.  

  5. Serve warm with strawberry sauce on top.
