Quick chili con carne
Check this out on your next Mexican night of fun in the kitchen. This is bound to get a second helping!
What you need
- 300 g Minced beef – lean
- 4 tbsp Mexican spices
- 2 Onions, chopped
- 1 Red pepper, chopped
- 400 g Kidney beans, drained
- 400 g Canned chopped tomatoes
- 680 g Brown rice, cooked
- 2 tbsp Coriander, chopped, to serve

Heat a non-stick pan on medium-high heat and fry the minced meat seasoned with the Mexican spices for about 5 minutes, season with salt and pepper, to taste.Â

Add the chopped onions and pepper and cook for another 5 minutes over medium heat.Â

Next, add the beans and chopped tomatoes, bring to a boil and simmer for 5 minutes.

Season with salt and pepper, if desired.Â

Serve alongside a portion of brown rice and, sprinkle with chopped coriander.
